Don't Just Stop and Smell the Roses, Eat them.

As some of you may have noticed, on the side bar under the Back to Basics logo I have an updated daily tally of things that I have harvested. One of those items was rose petals. I received an email the other day asking about said rose petals.

Here on the Neophyte Homestead we eat rose petals in various forms. The ones I harvest here are for Rose Petal Jam.

2 cups rose petals ( finely chopped)
2 cups boiling water
2 3/4 cups sugar
3 tablespoons honey
1 tablespoon lemon juice
( I did not have 2 cups of roses, so I had to adjust the recipe to fit what I had)

cover the rose petals with boiling water, simmer for 10 minutes. Strain and reserve both water and petals. Add sugar and the honey to the water. Simmer for 30 minutes. add lemon and finely chopped petals and simmer 30 minutes. Pour into hot jars.

I added 2 strawberries to mine. I tastes like watermelon Jolly Ranchers.

I have never heard of doing that. Sounds fabulous. I suppose it depends on what kind of rose's are harvested? Or do they all taste as sweet!!

I make rose petal jelly, and once I've boiled the petals for awhile, they turn the nastiest shade of brown. So, I strain them out and once I add the lemon juice, the jelly turns a brilliant pink. How do you keep your rose petals such a wonderful color? I would LOVE to make the jam instead of jelly!

I have always wanted to make this, and I have never had enough petals!

Reading what tim appleton said, when I was very young, there was an old man who roamed the neighborhood alleys with a knife, cutting dandelion greens... all of the neighborhood kids were scared of him!! lol

Can I just add that you should only use rose petals when you know how the roses were grown? In other words, us city folks shouldn't just go down to the florist and buy a bunch of roses and make jam because we don't know what kind of nasty pesticides might have been used.

Maggie, red roses will be stronger in flavor then other colors.

Tim, do I really want people talking more about me? ;)

Jami, you might be boiling the petals too long, I have never had them change a nasty brown color before, at least with jams.

Anita, I only had 1 cup of petals, so had to adjust the recipe for it. ha! I would have been scared of him as well.

MJM, you are right, and I should have said that. Thank you for catching me on that one.

I also forgot to mention, remove the white part (bottom of the petal) and discard it. That is a very bitter part of the petal.

I've never had rose jelly...sounds wonderful! Wonder if you could add other things in besides the strawberries and it would give an interesting undertone to the flavor...elderberry, raspberry, persimmon, etc? You rock, Phelan :)

Very cool! I wish I knew if they used pesticide on the rose bushes at work...they are covered with flowers right now!
