You need paste to make various other tomato based sauces
makes about nine 1/2 pints
13 lbs Peeled,cored, chopped tomatoes
1 1/2 c Chopped sweet red peppers
2 Bay leaves
1 tbs Salt
1 Garlic clove; peeled
Cook tomatoes, peppers, bay leaves, and salt for 1 hour over medium heat, stirring occasionally.
Press through a food mill and return to pot. Discard seeds and bay leaves.
Add garlic, and continue to cook over medium to medium low heat, stirring frequently, until tomato mixture is thick enough to mound on a spoon, about 2-1/2 hours. Or place in a low oven over night.
Remove garlic.
Pour hot paste into hot 1/2 pint jars to within 1/4 inch of tops.
Process in a boiling water bath 45 minutes.

I've been approached by a local restaurant to run a farm for them that would produce most of their veggies that they use in their cooking. They have a location, but it hasn't been farmed in years, so it needs a tremendous amount of work.
What can I do this fall to help prepare for next spring? Is there anything that I can do now for weed eradication, soil building, and other foundation-type activity?
So in other words, what do you do when starting a new garden?
