One of Those days
I'm not lecturing, or giving you a how-to, today. Just don't feel like it. I am not in love with the world, and I don't actually hate it, just a little fed up with it.
Yesterday at my husband's work, our piece of work 1988 Phoenix was stolen. Our only running car of late. Who on Earth would want to steal that thing? I don't even want to drive it half the time. My husband's new boss called the police, and our car was returned to the parking lot around the same time as the cop showed up. No the people or person was not caught. More than likely it is the teenager that lives behind the shop, why else would you return the car. They stole my digital camera, and destroyed the glove box attempting to get into it.
Replacing my camera is not on our need list. Although it is high on my want list. So, no more photos until the need list is down and I can get something on my want list. Maybe for my birthday? naw.
I have a ton of tomatoes and apples to deal with today. Apple recipes are more then welcome.

Sweet Pickeled Cucumbers
Am I boring you yet with all this food preserving talk?
2-1/2 pounds 3-inch pickling cucumbers, well-scrubbed and quartered into spears (about 12 cups spears)
4 cups cider vinegar
4 cups sugar
1/4 cup kosher salt
2 teaspoons mustard seeds
3/4 teaspoon celery seeds
1/2 teaspoon freshly ground black pepper
6 heads dill
2 medium sweet white onions, halved lengthwise, cut crosswise into 12 1/2inch-thick slices
7 whole cloves
Place cucumbers in a large bowl.
In a large saucepan, stir together vinegar, sugar, salt, mustard seeds, celery seeds, cloves and pepper. Bring to a boil over a high heat, stir to dissolve sugar. Pour hot vinegar mix over sliced cucumbers. Allow to sit until cool enough to touch.
Put dill and 1 slice of onion at the bottom of each of your sterile jars.
Pack into sterile quart jars. ladle vinegar mix over cucumbers in the jar, leaving 1/4 inch head space. Process in hot water bath for 5, 10, 15 minutes depending on how high you are from sea level.
Got leftover juice? Pickle sweet peppers the same way, or make sweet cucumber relish.
Onto other things. I was finally able to milk Eddie, our most recent cow mom. I pulled a quart, and allowed the calf, Urth, to have the remainder.

Blueberry butter and Grape Jam
I will not rehash the blueberry butter scene, I posted the recipe here, back in July of last year.
Hectic morning! Boys start school today! I thought it was tomorrow!
Grape Jam
6 c. prepared fruit (about 4 lbs. ripe grapes)
1 box powdered fruit pectin
7 1/2 c. (3 1/4 lbs.) sugar
Prepare grapes, by mashing through a food processor. Place into a large pan, stir in pectin and bring to a boil. Stir in sugar all at once, bring to a hard boil over high heat for 1 full minute. Remove from heat, and strain through a cheese cloth. Remove any foam. Place into your hot sterile jars.

Oh, I didn't forget
Canned Corn! What a wonderful sickly sweet stench does that make. But it only lasts as long as you have corn to can, then it is gone and another smell will fill your kitchen, making you gag and wonder who eats this stuff.
Place whole kernels in your sterilized pint jars. Pour hot water over top, leaving a 1/2 inch head space. Place on lids, and pressure can at 10 lbs for 25 minutes. ( we really should discuss sea levels and canning)
Freezing your corn on the cob is simpler. Clean them up, shove in a bag and freeze. If you wash them before freezing, pat them dry.
Tomorrow we will talk about something much more important then corn, blueberry butter and Grape jam.

That's just plain wrong.
I mentioned that I was going peach picking the other day. Yesterday we loaded up the car with baskets and boys, and took the hour drive south for free peaches. When we got there, it was discovered that someone had gleaned all the peaches without the farmers permission! He thought we had come out on Saturday and picked them while he was gone. No! We were very disappointed.
Luckily he had baking apples that were ready for picking. So we loaded up the car with those. Not as many as we got last time we were out there, but enough that it will keep me busy this week, as this weekend we will be going back out for two trees full of peaches that hadn't ripened yet. Let's just hope no one steals them before we get back out there. Beware of the apple tag, you might get more reading then you asked for!
On a personal note, my husband went in to quit that agri job this morning. The bike shop he was working for on Saturdays offered him full time work at a wage that he couldn't pass up. I get to see my husband again! Good thoughts for him if you would please. The agri job boss reminds you of a bad teenage girlfriend.
