I have finished canning my peaches. Got 9 quarts for pie. Well, ok, it is actually a simple syrup with peaches in it.

1 gallon of water, 4 oz of pectin, and 2 cups of sugar. Blanch peaches, and pull off the skin. Pit and throw into the pot with the above mixture. Heat through and can.

The liquid you have left is a wonderful peach flavored simple syrup that can be used for tea sweetening or pops.

I processed 2 quarts of the simple syrup.

I have peach butter simmering on the stove now.

Looks delicious. I love homegrown peaches - can't wait for the farmer's market on Sunday. [dang thing only comes once a week, grr]

Quick question - when I can I try not to leave that much space in the jar - afraid the air will mold the contents - do you find that to be a problem or do you eat it too fast to worry about it?

That looks scrumptious! I wish I could find peaches that weren't so incredibly expensive, so I could stew some up.

When I lived elsewhere, I used to do that with bruised and less than perfect peaches -- cook them in simple syrup, with the addition of a few cinnamon sticks and cloves.

But in my current location, they are selling for about $3 per pound, and at the Farmer's Market (ironically, the MOST expensive place to buy produce around here), they are $5 per pound.

Oh yeah apples are good, but oh my peaches are part of heaven, I love peach anything, wanting to get some soon here too to up. Skippy, as long as they are sealed correctly I have never had a problem.

Blather, have you tried looking up a local U-Pick-It farm?


And remember to haggle! Try talking tot he producers toward the end of their season, make a deal to buy a bunch of peaches (an amount you can afford) at the beginning of their next season. Get everything in writing. You can also place an ad on craigs list, offering to clean (glean) fruit trees.

It looks good, I also canned Peaches in the last month my sister had 3 peach trees & blessed me with all the peaches I ended up with 3- 18 gallon bucketfuls. I did canned the extra peach syrup but never thought to use it in pop plus Peachbutter I have never had that either. I wouldn't even know how to make it.
