Champ

10 scallions, chopped
1 1/2 cups milk
3 1/2 cups hot mashed potatoes
4 tablespoons butter
minced chives

Cook the scallions in the milk along with a healthy pinch or two of chives. Drain, reserving milk. Stir together the scallions and potatoes, beat in enough of the milk to make it smooth. Salt and pepper to taste. Melt the butter and make a well in the center of the potato mix. Pour the butter in well. When serving, dip the potato mix into the butter.
