Squirrel

When I was a little girl, my family and I went to a family reunion. While there I fell in love with a homemade buffalo wing, ok wings, many many wings. I am surprised I didn't get sick. These things were great.

After awhile my Uncle comes over and asks how I am liking the food. I informed him that I loved it with a big BBQ sauce stained grin. he looks at me and says,

good, I love that squirrel meat just as much.

I stopped eating them right then. I never knew if he was teasing or not. I actually wouldn't doubt that it was squirrel.

I have never seen squirrel meat for sale, to be honest I never really looked for it. But it is there and people do eat it. Yet another local food for you.

Squirrel!

I love squirrel. Grew up eating it. One of my favorite ways to eat it is my grandmother's method:

Cut it up into parts. Brown quickly in a little grease in an ovenproof skillet. Cover with cornbread dressing. Bake. The squirrel adds a nice gamey flavor to the dressing, and the moisture from the dressing keeps the squirrel meat moist and tender. (Squirrel meat can be a little dry and tough.)

I'm country enough that squirrel was actually on the menu at my house growing up. My dad, uncles, cousins and brother would go squirrel hunting and bring home their prizes. Mom never touched them, so dad had to cook them. I never ate them cause I was a teen at the time and was not into eating cute and fuzzy.

Farm Mom, you missed out. If you get another chance, try it.

Most Americans these days prefer the bland taste of corn-fed meat. Personally, I like the stronger flavor that comes from letting animals eat a natural diet. And game animals are particularly good.

Venison? Yum.

And squirrels aren't always cute and fuzzy. Those suckers can be downright mean.

Particularly when you are trying to shoot them. ;-0

Mark- I agree with you, meat tastes better when the animal has been eating what nature intended it to eat. And if I had the chance to eat squirrel today, I would definately try it!! :)

Unlike some of the others, it's one of the fame meats that I *don't* care for.

Rabbit, on the other hand, is good....

My mom says that squirrel is really good with gravy...better get that recipe from her while I can!
